Back to School Muffins

Home Cooking Column - By Barbara Collins
I got sent a really interesting product the other week. It’s called Powdered Peanut Butter. It has 70 per cent less fat than traditional peanut butter and is high in protein and fibre. You can make it up with water and also use it powdered in recipes like these Back to School Muffins. You can use ordinary peanut butter too but this product by Hale Naturals is available online and in lots of Holland and Barrett and Tesco stores.
Ingredients
- 270g rolled oats
- Half a teacup of sugar or Stevia
- 3 tbsp Powdered Peanut Butter
- Handful of raisins
- 2 tsp baking powder
- Half a teaspoon of salt
- 2 eggs plus 1 egg white
- 300ml milk
- 2 mashed bananas
- 1 tbsp cinnamon
Method
Preheat the oven to 175 c 150 Fan Oven
Mix together the oats, sugar/stevia, powdered peanut butter, cinnamon and baking powder in a bowl. If you are using ordinary peanut butter, blend it with the wet ingredients (eggs, mashed banana and milk) in a separate bowl. Add the dry ingredients to this mixture and stir in the raisins.
Spoon the mixture into 16 muffin cases and bake for 20 minutes. That’s it. So easy!
Tip
Kids love helping with this recipe and the muffins are healthy.
