Sneak peak at new Kildare restaurant and retail store ahead of November opening
Full steam ahead in advance of Dillons Rathangan opening in November
Work is continuing at a fast pace as the weeks fly by. Charlene Brereton and her team began painting the building last week. Owner, Shane Ryan has engaged local man, Connie Broderick to help rejuvenate the old signage.
Captioning a photo of the pair examining the lettering, the Instagram post states; “Shane takes a closer look at the original lettering that stood proudly over Dillon’s for more than 50 years, alongside master sign writer Connie Broderick. Having taught this traditional craft at Bolton Street College for over 40 years, Connie will now bring his remarkable skill and experience to all the signage and gilding throughout the new Dillon’s.A beautiful piece of the past helping to shape the future.”
Michelin star chef, Derry Clarke is continuing to finalise the menus and last week, he took a special interest in the kids offering.
Mr Ryan said: “Having someone of Derry’s calibre leading our kitchen is an incredible milestone for Dillon’s. His passion for outstanding Irish ingredients, his respect for producers, and his belief that food should be simple, honest and memorable perfectly reflects everything we want Dillon’s to be. This is about creating an experience people will travel for while remaining firmly rooted in the heart of Rathangan.”
Meanwhile, the interiors are continuing to take shape with Brady Builders at the helm. Behind the scenes, away from the hustle and bustle of the building work, manager, Sarah Donnelly is busy hand-selecting beautiful pieces for Dillon’s retail section on the ground floor.
“Every item is being carefully chosen to create a truly unique shopping experience in the heart of Rathangan.” according to the Instagram post.
